What’s a girl to do when she has a severe case of the cooking blahs? Here in Minnesota, we’re in the midst of that awkward time where winter vegetables have lost their allure and fresh local food will not be making an appearance until early May. Nothing feels exciting to cook.
In the past when I’m feeling uninspired, I’ve assigned myself challenges to get back into the kitchen – either explore a new cooking technique, an ingredient I haven’t used much or go in depth with ingredients that are in season. Last year at this time, pineapples and mangoes vied for my attention.
This year, inspiration struck when I came across a quinoa salad recipe online and the light bulb went on. Quinoa! A super grain that I felt I should be eating, but currently don’t. Best to get on with that super challenge…
