This weekend has been all about eggplant experiments and explorations. We had our huge stash from the farmers market that we needed to get through, so we’ve had eggplant for most meals this weekend. Nothing like a little enforced togetherness to get to know one another.
And you know what? I think I’ve come to a peaceful accord with the eggplant.
